Grilled chicken with apricot salad

A great grill recipe with apricots for the summer to go with apricot fruit spirit!

Marinade the chicken in olive oil, salt and pepper and let it rest for 60 minutes. Then grill until done and crispy.

In the meantime, rinse the apricots, remove their stones and cut them into slices. Roughly tear the mozzarella and arrange it on a plate together with the apricot slices. Season with lemon juice, olive oil, salt and pepper and sprinkle with fresh mint.

Ingredients to serve 4 people
4 chicken breast fillets
2 tbsp olive oil
Salt, pepper
15 ripe apricots
2 pieces of buffalo mozzarella
1 lemon, juice
A little olive oil
1 handful of fresh mint
